Talented and inventive, Chef Thierry Longo exerts his art within the Grand Hotel and more particularly the Pavillon Pétrus for which he composes menus able to satisfy even the most demanding pallette.

With experience at several distinguished establishments, including the “Moulin de Mougins”, a restaurant distinguished by three “macarons” (Michelin-star rating for chefs), Thierry Longo defines his job as an art of bringing creative flavors and sensations to his customers.

Often starting with a simple drawing on a white sheet, he imagines and works his dishes “on paper” before giving them life in the kitchen.

Opera of artichokes, crayfish cannelloni or carpaccio of scallops, Thierry Longo’s kitchen reserves beautiful surprises to fine gourmets who can savour these culinary discoveries.
